In Minnesota, a summer day spent on the lake is second to none. But a day driving along the shore of Lake Minnetonka and stopping for lunch at The Cov in Wayzata, is also at the top of my list.
As my mom and I spent the afternoon exploring and watching the countless boats cruise by, I couldn't help but feel like I was in the Hamptons or a small island off the coast of Maine. It was an unexpected staycation in a state that's always full of surprises.
